CULINARY APPROACH TO FLAVOUR



Forgotten has been shaped by our co-founder, Ashley Palmer-Watts. Ash is renowned for his pioneering approach and focus on simple intuitive cooking with exceptional ingredients and painstakingly developed technique. Ash brings that empirical approach to redefining these spirit categories.

Forgotten uses precision cold extraction and ultrasonic cavitation to capture intense flavours from second life ingredients sourced from UK farms, producers and manufacturers. We create distinctive complex flavours from fruit, leaves and roots that would otherwise have gone to waste.

These are blended in phases with sugars, salts and acids to create bold liquids with completely unique flavour profiles; only achievable through our innovative approach.

SECOND-LIFE

We follow a nose to tail culinary approach to flavour in craft drinks production; utilising citrus peels from juice production that would otherwise go into waste, wonky raspberries sourced direct from British farmers and low carbon British wheat vodka.

CIRCULARITY

Many of the bottles in our circular supply chain are second-life Bordeaux-style bottles from our customers, these are cleaned, refilled and redelivered.

PACKAGING

Green glass protects the liquid and is made up 90% post-consumer recycled glass vs. clear glass which can only contain up to 25%.

Our lightweight green glass bottles typically weigh 25% less than than standard spirit bottle.


We proudly use no plastic in our packaging and our cardboard cases are made from post consumer recycled board.

CORK CLOSURES

Natural cork is a regenerative material grown in family-owned orchards in Portugal. Traditional corks create 70% wastage which is usually burnt, our agglomerate corks are made from these offcuts.
